Cream Cheese Cups

I had high hopes for this recipe… but it didn’t quite cooperate with me like I wanted it to.  (Is it still considered a flop if it tastes yummy??)  Most of you probably don’t know this, but cream cheese was one of the [few] new foods I introduced in 2010.  (That and guacamole, note I did not say avocados, just the guacamole ha-ha.)  Not long after that, I stumbled across this little gem of a recipe from a friend and I have been singing the praises of cream cheese ever since.  I would spoon this sweet creamy mixture onto everything if I could. 
I think the trick to make something sinfully delicious is to just add that forbidden raw egg; this stuff puts cake batter to shame when it comes to wanting the lick the bowl.
2- 8oz pkgs cream cheese; softened
1 cup sugar
2 tsps vanilla
1 egg yolk
Beat all the ingredients together until creamy.  Now, the way my friend makes it you just layer this mixture between two rolls of crescent rolls and bake (350 degrees for 30 minutes).  I *attempted* to do something different here, I wanted to make these cute little cups (325 degrees, 15-20 minutes).

Using Pillsbury seamless dough, cut the sheets into 12 squares.

Position the squares into mini muffin cups.
Next fill the cups with the cream cheese mixture.  I used a cookie scoop, which worked out perfectly, except I think it filled them a little too full.
The puffed up pretty big while baking, after the cooled some they did look a little more presentable.
Next time I would definitely add less filling and I think it would work out.  How cute would this be as a sweet little appetizer.  I love to make this for breakfast, so you could pop some strawberries (or your fruit of choice) on top and serve these to your hunny for Valentine’s Day.  My favorite thing about this recipe is it reheats so nicely.  Store the leftovers in the refrigerator and they will be just as delicious, if not better, the next day.  (Microwave about 10-15 seconds).
Funny story:  I was very carefully trying to crack the egg over the sink to separate the yolk.  I cracked open the egg and this is what I found:
It took me a few minutes to realize that I had grabbed one of James hard boiled eggs!  I seriously thought it was frozen or something, just so caught me off guard ha-ha-ha!  Have any funny stories, or flop stories, to share?
