We joke that after every meal my mom makes, my granddad- Papa- says that meal was the best he’s ever had. We’ve kind of adopted that saying as a way of life. After all, life’s too short, shouldn’t everything be the best ever? This chicken and rice is one my favorite dishes my mom makes. It’s the best ever.
What you will need:
3 large chicken breasts
2 tbsp. butter
2 tbsp. oil
½ small jar pimentos
1 bunch of green onions
1/3 roll of spicy sausage
1 cup slow cooking rice
2 cups water
1 chicken bouillon cube
Salt and pepper
In a large saucepan heat butter and oil.
Brown the chicken breasts.

Salt & pepper, then set aside in a separate dish.
Brown the sausage in a skillet. Add the pimentos and green onions (discard about two inchs of each end and then chop the remaining into small pieces); sauté until soft.
And the rice and continue cooking until starting to brown.

Microwave your water (1-2 minutes) and then dissolve the chicken bouillon cube in the warm water.
Add the water mixture to the skillet and continue cooking until the rice is almost cooked.
Pour the rice mix over the chicken and cover with foil. Bake 35-40 minutes at 350 degrees.
I’ve mentioned that learning to like to cook is on my list, and I’m excited that I am really beginning to enjoy it! If I am being completely honest (were all friends here right?), this was literally my first time to brown chicken. (I know, I know, insert dramatic collective gasp from the audience here!) And I only did it this time out of self defense—I was afraid if I didn’t then the rice would cook faster than the meat. I also bought fresh chicken, as opposed to the frozen that I usually cook with.
Raw chicken really just creeps me out, don’t they just look like huge chicken lungs or something? I know, I have issues. But that’s okay, because tonight I am proud to say that, armed with my new tongs, I am no longer a chicken when it comes to raw chicken! Any food or ingredient that creeps you out to cook with??

Raw anything meat usually creeps me out a little, but it tastes so good once it’s cooked! This dish looks great!

It was sooooo yummy!! Thanks for “letting” me be your guinea pig! And the thing that creeps me out about chicken is all the diseases that the raw chicken leaves behind! yuck!!
Oh I so hate raw chicken too. When I buy chicken, I buy it in bulk amounts and then cut it up in to bite sized pieces, chicken tenders and then leave a few whole. But I cut them with kitchen shears and then use tongs to put them in the freezer bags, just cause I hate the feel of it. . (Squish them flat for storage and also help them to thaw fast!!) Love it, I’ll have to try this recipe!!
