Dark Brown Sugar Cookies

I asked my husband to pick up some brown sugar when he was at the store yesterday.  It didn’t occur to me to specify dark vs. light brown, because honestly I don’t think I’ve ever even used dark brown!  So of course, what does he bring home?  Dark brown.

Luckily I had just enough light brown in the pantry to finish the recipe I was making at the time; but what was I going to do with the bag of dark brown sugar sitting on my counter top?  Well, when in doubt, make cookies.

Dark Brown Sugar Cookies

2 sticks butter, softened
1 1/4 cups dark brown sugar
2 eggs
2 tsp vanilla
2 1/4 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
 1/2 tsp salt

Beat the butter and sugar together until light and fluffy.  Add in the eggs one at a time, beating after each addition.  Stir in the vanilla. In a separate bowl combine the flour, baking powder, baking soda, salt, and cinnamon.  Slowly mix in the flour mixture.  Scoop the batter into a bowl of about 4 tbsp white sugar and coat each cookie ball completely.  Bake at 350 degrees for 10-12 minutes.  Let stand on cookie sheet 2-3 minutes before removing to cooling rack.

These cookies turned out crispy on the edges and chewy soft in the middle.  You could leave out the cinnamon if you like; it just adds another dimension to the taste.  I didn’t particularly care for it, but the fam preferred it.  James has to work a shift in Labor and Delivery at a local hospital tomorrow so I plan on packing these cookies up for the nurses.

  2. They were a huge hit with the nurses! So glad we gave them away so I didn’t end up eating more than I already did!
