National Strawberry Shortcake Day

Since when do we have a day for everything?  National Donut Day, National Iced Tea Day, National Cheesecake Day…. I mean I’m not really complaining, I’m just wondering who came up with these and where can I get a list? 

Apparently today is National Strawberry Shortcake Day.  Truth be told, I had no idea this was coming up when I bought angel food cake and strawberries last weekend… so we actually celebrated a few days early.  (Shh!)  Such a classic summertime treat, fresh strawberries with homemade whipped cream.

If you need a quick whipped cream recipe, it’s actually really easy:
Half a pint of whipping cream
Scant 1/4 cup of sugar
Splash of vanilla

Beat the whipping cream (preferably in a cold, glass bowl) until it starts to stiffen.  Add in the sugar and continue beating until soft peaks form.  Fold in the vanilla.  Be careful not to over beat or you will turn your cream into butter!  I prefer my strawberry shortcakes with angel food cake instead of pound cake.  I also add about a tablespoon of sugar to the strawberries for some added sweetness.
