These chewy chocolate cookies are one of my favorites to make because they are so easy and freeze really well. There are a few secrets to get the perfect results.
1 1/4 cup butter 2 cups flour
2 cups sugar 3/4 cup cocoa
2 eggs 1 tsp. baking soda
2 tsp. vanilla 1/2 tsp. salt
Cream softened butter and sugar; blend in eggs and vanilla. Combine dry ingredients in a separate bowl and then add to the wet mixture. Drop by spoonful (I use a small cookie scoop) into a small bowl of sugar. This is secret #1… always roll your cookies in sugar prior to baking. Bake at 350 degrees for 9 minutes. This is secret #2… take them out at 9 minutes, they will look soft but they will continue cooking on the baking sheet; let stand on the baking sheet for 1-2 minutes until no longer puffy. Remove to cooling rack.
We dressed these up for Fourth of July to take to our local Fire Station.
They would also be great as little ice cream sandwhiches. Yum!
