If you follow me on Instagram you’ve been seeing a lot of sweaty selfies lately. On one hand, I’m sorry for that, but on the other, I’m kind of not. It’s really helped me be accountable. I want to document this journey and maybe even motivate someone else to start their own. I’ll go into more detail about my goals and where I’m at vs where I want to be on another day.
I’ve been tracking my diet everyday using an app on my iPhone. I say the word diet as in “the kinds of food that a person habitually eats”… not as “a special course of food to which one restricts oneself to lose weight.” I’m not doing any crazy fad diets or counting points or any of that nonsense. I am just simply trying to eat better- watching my carbs, upping my protein, limiting fats, reducing sugar. Basically, the “moderation diet”.
I’ve always been a HUGE fan of Chipotle- but it seems like I’m eating there once (ahem, or twice) a week now. I fully support their way of doing business (locally sourced, hormone/antibiotic free, moving towards non-gmo, etc)… and I love their online nutrition calculator. I can get my normal meal (minus the flour tortilla and chips) and stay around 500 calories! That’s not a bad number for such a filling, high in protein dinner. Chipotle is definitely my go-to “fast food” when I don’t feel like cooking.
The Chipotle by my house is always crazy busy, like line out the door busy, so I’ve learned to order online and skip the waiting. The other day I ordered online, excitedly rushed home, opened my burrito bowl, and noticed they forgot my roasted chili-corn salsa. Not gonna lie, I was pretty devastated (lol) and may, or may not, have tweeted to let them know. I realized then how EASY it would be to make my own.
I love to add this to plain cubed chicken to spice things up. Can I just tell you how bored I am of chicken!? This would also be super yummy just scooped up with chips or as a side dish!
Note: I use Birds Eye Steamfresh Pure & Simple Gold & White Corn. I love the convenience and steam fresh taste. You could also use roasted fresh corn on the cob and cut off the kernels. I also use a yellow onion- 1) because it’s what I had, and 2) because red onions aren’t my favorite. Feel free to swap this out.
- 1 bag (12 oz) Steamfresh® Gold & White Corn, cooked according to package directions
- 1/4 cup finely chopped onion
- 2-3 tbsp chopped cilantro
- Juice from 1 1/2 limes
- 1 scallion, diced
- 1-2 jalapeños, diced (remove seeds unless you like it really spicy)
- chipotle chili powder, to taste
- salt and pepper to taste
- Combine all the ingredients and refrigerate for about an hour.
- It's important to let this chill in the refrigerator to give the flavors time to meld.
