We love tacos at my house, and they usually make an appearance in our weekly menu rotation. This week I decided to switch it up and make chicken tacos. I didn’t want to grill the chicken like we do for fajitas, so I decided nothing is easier than seasoning it and putting in the oven to bake. This chicken comes out flavorful and moist, but the best part is that I can put it in the oven and walk away to finish what I need to do. Perfect for a week night meal!
Ingredients
- 2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp cayenne pepper
- 1/2 tsp red pepper flakes
- 1/4 cup butter, melted
- 1/2 cup onion, chopped into slivers
- 1-2 lbs chicken breast, thawed
- Preheat the oven to 400 degrees. Melt the butter in the microwave and pour it into a baking dish. Line the bottom of the dish with the onion slivers. Pat the thawed chicken breast dry with a paper towel. Mix the spices above into a small bowl. Coat each side of the chicken breast with the spice mixture and place in the baking dish. Bake for 30 minutes (or until chicken is done). Put the chicken into your stand mixer with the paddle attachment to shred, or use a fork. Serve with your choice of sides and toppings, inside flour or corn tortillas.
The spices provide just the right amount of flavor and heat, without being too spicy for the kiddos (or adults)! We served our tacos on warm flour tortillas with Pioneer Woman Restaurant Style Salsa. Would have loved to make McCormick’s yummy guacamole to go with our meal, but all of the avocados were rock hard at the store. Next time!!
